Fast food used to mean “a burger and fries.” Today it’s also “super greens with vegan cashew dressing.” What will the fast food, or quick service food, of the future be? And what does the government have to do with it? Through the exploration of fast food, we’ll explore how menus represent food ecosystems and predict what food will look like under different future conditions. We’ll tackle the government’s role in food of the future and understand how menus will be impacted by climate change, lab grown food, food scarcity, cultural influences, and efforts to minimize waste and increase equity.
