A Plant Protein Showdown

There is no shortage of people trying plant-based foods. But the challenge lies in getting people to come back for seconds. And for homecooks, an even bigger challenge is knowing how to actually work with these new plant-based ingredients. This panel session will bring together notable chefs and a food-tech innovator to discuss the future of plant-based, while giving the audience an intimate look at how some of the nation’s renowned culinary experts approach cooking plant-based meals. The chefs will share a short pre-recorded, virtual cooking show-down to demonstrate the most important elements (i.e., highlighting science of the senses) for delivering an exceptional plant-based eating experience. Motif CEO John McIntyre will host a “fireside chat” with the participating panelists to discuss how classically trained chefs and home-cooks can tap the power of science today to cook with plant-based ingredients, and why plant-based cooking techniques need to be interchangeable with those used with conventional animal-based counterparts for seamless dietary integration.
