Karl De Smedt
Karl is Puratos’ dedicated Sourdough Librarian, preserving over 130 sourdoughs in Worlds Only Sourdough Library. What bakers gained in assurance with baker’s yeast, was lost in sourdough biodiversity. His mission is to revive this diversity of taste, traditions, and health benefits. He climbed the Klondike Mountains, searched for the “best bread to be had” in the Roman empire, and visited the oldest bakery in Tokyo – in search of the world’s most unique sourdoughs that deserve to be preserved for future generations.
