Jorge Luis Hernandez
Chef Jorge Hernandez has only been back in his native state of Texas for the past three years. But, in that time he has been on the forefront of the Austin dining scene. Prior to moving to Austin, Chef Hernandez served as the Executive Sous Chef of Jose Andres’ flagship creative powerhouse ‘minibar by jose andres’. His time at Qui restaurant showcased an ability to bridge the cuisines of his Spanish training, along with native Texas influences, with a playful combination of the cuisines of Latin America, Japan, and Southeast Asia. It also showcased the collaboration between the kitchen and service teams, where the normal lines of distinction between the two teams was blurred in order to achieve Chef Hernandez led the research & development program that harnessed the creativity of owner, Chef Paul Qui, transitioning from a la carte service to tasting menu format, culminating in an interactive 20 plus course ticketed tasting room menu.
