Austin chef Jesse Griffiths (and author of James Beard Award finalist "Afield") opened his all-local restaurant and butcher shop, Dai Due, after years of leading the Austin local food scene with his supper clubs, butcher shop and wild-game and butchering workshops. The poster boy for the hunting / cooking movement believes in serving food in its most elemental and basic state.
