How Do We Get Billions of People to Eat Less Meat?

Saturday, March 12
3:30PM - 4:30PM

The Driskill
The Driskill Ballroom
604 Brazos St

U.S. consumers are increasingly aware of the impact of our high per-capita consumption of meat on the environment, global food security, antibiotic resistance and increasing chronic disease. But dramatically reducing our meat consumption to reverse these trends can seem radical, even impossible. How can you convince people to cut back on something so abundant, cheap and delicious? This panel will explore what history tells us about how dietary shifts happen and what it can teach us about how to encourage individuals to embrace a lower-meat diet going forward. We’ll discuss a number of historical cases, such as efforts during World War II to get Americans and Brits to eat offal.
